In the Kitchen: Onion Compote Stuffed Burger

Ever photographed a burger?  Please do not judge.
My husband has a lot of burger favorites  - he will stuff them, smother them, and char them.  This is his current favorite.  As a disclaimer, he LOVES caramelized sweet onions and now he has found almost a "cheat" way of doing them.

Here is the recipe he used

For the Compote -
1/2 cup water
1 1/4 cups beer *hubs used Newcastle
1/2 cup brown sugar
2 red onions, sliced
salt and pepper

For Burgers - 
3 pounds ground beef
1/4 cup beer
2 tablespoons grill seasoning
1/2 cup shredded cheddar
hamburger rolls
burger toppings of your choice

For the compote:
In a medium saucepan add water, beer, sugar, and onions.  Season with S and P.  Stir and bring to a boil, then reduce to a simmer.  Stir occasionally for 1 hour or until thickened and reduced to approx 2 cups.  Set aside to cool completely.

Make your burgers - everyone knows how to make burgers.  R uses a large ramekin to help him shape the burgers so they fit the size of our bakery rolls.  It's easiest to make thin patties, put a spoonful of the onion mixture in the center with some shredded cheese and then top with another thin patty.  Press the meat together around the burger.  Or roll the meat around the cheese and top with onions as the recipe suggests.  Either way they are delicious!
