2 large tilapia fillets
3 Tbsp butter divided
salt and pepper to taste
1 Tbsp flour
1 garlic clove minced (I used about a teaspoon of minced garlic from a jar)
1/4 cup chicken stock
2 teaspoons lemon juice
1 medium tomato, diced
Season the fish with salt and pepper and sear them in 2 Tbsp of butter over medium heat for 3-4 minutes per side. Remove fillets from the pan. Heat the remaining 1 Tbsp butter over medium high heat and add garlic. Stir in the flour and cook 1-2 minutes. Slowly whisk in chicken stock and lemon juice. Top the fillets with sauce and diced tomato.
